When it is the scotch whiskey that will stay longer in these barrels that they will also be able to get the flavors that remained in the barrel. After this process that there will be a new chemical component and that is phenol which gives whiskey that distinctive smoky flavor.

The environment it where the whiskey is stored also plays an important role in its taste. It is when bourbon is made that its stored in a dry environment which helps in faster evaporation and concentration. The scotch whiskey, on the other hand, is placed in a humid environment.
